Pesach Recipes Ideas

For the Seder:


Appetizers

  • Hummus with Panfried Zucchini and Matzah

Ingredients list- Chickpeas, garlic, tahini, lemon juice, olive oil, cumin, zucchini, salt and pepper, paprika for garnish.

Directions- Process ingredients until smooth, add the cumin ,salt and pepper then process to mix, plate with panfried zucchini and matzah.


  • Baked Mushrooms

Ingredients list- Portobello Mushrooms, garlic, Olive oil, onion, matzah meal, chopped tomatoes, basil, nuts (of your choice), parmesan cheese, salt and pepper.

Directions- Heat the oil and saute' the ingredients add the tomatoes, salt and pepper and fill the mushroom cups. Sprinkle the parmesan cheese and nuts on the mushroom cups. Bake for 25 mintues at 375 degrees until golden brown.



Sauces


For Vegetables, Fish, or Poultry:

  • Ginger and Tomato Sauce

Ingredients List- 1 tablespoon of honey, 2 garlic cloves, grated fresh ginger, 1 teaspoon of toasted sesame oil, 2 1/2 tablespoon of organic soy sauce, tablespoon of olive oil, 7 chopped and seeded tomatoes.

Directions- Cook ingredients for 2 to 3 minutes, reduce heat and allow to simmer for up to 10 minutes. Strain.


  • Simple Salad Dressing

Ingredients List- Olive oil, lemon juice, salt and fresh ground pepper

Directions- Mix and toss over vegetables.



Desserts


  • Cucumber Strawberry Cups

Ingredients List- Cucumbers, strawberry yogurt, Strawberries

Directions- Remove the inside of the cucumbers using a spoon, cut the end of the cucumber to create a sturdy cup. Fill the cucumber with fruity strawberry yogurt, top with fresh Strawberries. Garnish with fresh mint leaves.


Recipes are for Sephardim and Ashkenazim as some may be kitniyot.
